- Wash and slit brinjals 3/4 way down to the stem.
- Put oil and brinjal in the pan of the cooker without the cooking plate, cover with the lid and switch to 'cook mode'. After about 7 minutes the cooker will automatically switch to 'warm mode'.7 minutes later remove the brinjals onto a plate.
- Meanwhile roast the onions on direct flame. In a mixer, grind the onions, sesame seeds, coriander seeds, cumin and garlic to a paste.
- Add this paste to the remaining oil in the pan of the cooker. Also add curry leaves, turmeric powder, chilli powder, and switch to 'cook mode'.
- After 15 minutes add the brinjal, tamarind water,
jaggery, salt with 2 cups of water.
- Cook for 15 more minutes and then switch off. Serve hot with
Parathas.
