Bhindi Dahi [Kerala Style]

Serves 6

Ingredients: 
½ kg. bhindi 1 tsp. cumin seeds
1 tsp. mustard seeds 

1 tbsp. urad daal

3 whole red chillies 5-6 curry leaves
1 chopped onion  2 chopped tomatoes
1 tsp. chilli powder 

½ tsp. turmeric powder

½ tsp. fresh curd  3 tbsp. oil
Salt to taste Oil for deep frying
For the paste:
1 coconut
2 tbsp. cashew nuts
Method:
  1. Cut the bhindi into 1½" pieces and deep fry in oil until crisp. Heat oil, add cumin seeds, mustard seeds and urad daal and fry. After a while, add the red chillies and curry leaves and cook again until the seeds begin to crackle.
  2. Add onion and saute until golden brown. Add the tomatoes, chilli powder, turmeric powder, the paste and salt and fry until the oil separates. Add 1¼ cup of water to the curd and churn, add to the mixture. Add the bhindi and cook for a few minutes. Serve hot.
