Brinjal Sambar

Preparation time : 1 hour 

Serves 4-5

Ingredients:
8-10 small brinjals 1 cup arhar daal
Walnut size tamarind  2 tbsp. fresh grated coconut
1 tsp. oil ½ tsp. red chilli powder
1 tsp. salt  ¼ tsp. turmeric
2 tsp. sambar powder 1 tsp. mustard seeds 
5-6 whole red chillies  Some curry leaves
Method: 
  1. Soak tamarind in water and extract the pulp. Slit brinjals and smear salt and soak in tamarind and coconut for ½ hour. Cook arhar dal.
  2. Put the brinjals with the daal and cook till tender. Heat oil. Put mustard and all other masalas and remaining tamarind juice. Pour this daal. Cook for 5 more minutes on low heat and serve with boiled rice.
