Coconut Delight
Preparation time: 15 minutes  Serves 6
Cooking time: 50 minutes
Ingredients:
100 gms. butter or margarine 4 tbsp. castor sugar
250 gms. self raising flour mixed in 6 tbsp. of water Grated rind and juice of a lemon
100 gms. dried coconut powder 5 tbsp. golden syrup
3 tbsp. of bread crums 
Method: 
  1. Take a 900 ml. [1½ pint] pudding basin. Grease the inside of the basin with butter.
  2. Take a mixing bowl and cream the butter [or margarine] and the sugar till it is light and fluffy. Then add the flour paste, grated rind, lemon juice and knead it to a dough.
  3. Divide the dough into 4 balls and roll each into a round shape. Put a rounded dough on the base of the pudding basin. Top it with bread crumbs, coconut powder and lace it with golden syrup. On top of this put another rounded dough ball. Repeat the process till all the rounded dough balls are placed on top of each other with fillings inside.
  4. Cover the basin with a greased aluminum foil, with a pleat in the center to allow for expansion while steaming. Tie it firmly with a thread.
  5. Remove the cooking plate, put the basin in the pan of the cooker and pour 6 cups of water carefully over the side, cover with the lid and switch to 'cook mode'.
  6. Cook for 50 more minutes and then switch off. Turn the Coconut Delight onto a serving plate. Serve hot.
