Cool Cool Kulfi 

 

Ingredients:
1 litre milk ½ tsp. cardamom powder

½ tsp. saffron, soaked in 1 tsp. warm milk 

12 almonds blenched, shelled and finely chopped 
1/3 cup sweetened condensed milk 1 tsp. rose water 
2½ tbsp. sugar 3 tbsp. corn flour dissolved in 4 tbsp. cold milk
Method: 
  1. Bring milk to the boil, then lower heat and add cardamom powder, saffron, almonds and condensed milk. Simmer uncovered for 5 minutes stirring now and again. Add rose water and sugar. Continue simmering for a few minutes, remove the pan from fire.
  2.  Mix corn flour mixture to the hot milk mixture. Place it on the flame, cook on medium flame stirring till the mixture gets thick. [do not allow it to become lumpy.] Remove pan from fire and let it cool. 
  3. Fill the mixture into cone-shaped kulfi moulds or into trays and freeze. Remove from freezer 2 minutes before serving.
