Hare Mattar Ki Puri

Preparation time: 30 minutes

Cooking time: 20 minutes

Makes: 20 Puris

Ingredients:
For the Dough: To be Mixed into the Stuffing:
500 gms. plain flour [maida] 2 teacups boiled green peas
2 tbsp. fresh curd 1 tsp. cumin seeds
1 level tsp. baking powder

5 finely chopped green chilies

1 tbsp. ghee or margarine or butter 1 tsp. plain flour [maida]
1 tsp. salt 1½ tsp. lemon juice

1 tsp. ghee

Salt to taste
Other Ingredients:
Ghee or refined oil for deep frying.

For the Dough [Method]:

  1. Sieve the flour very well.
  2. Add the curd, baking powder, ghee and salt and make a soft dough by adding some more warm water.
  3. Knead the dough for at least 6 to 7 minutes.
  4. Keep the dough under a wet cloth for at least 1 hour.
  5. Knead for 1 minute.
  6. Divide the dough into 20 balls and flatten a little.
For the Stuffing [Method]:
  1. Mash the green peas and add the green chilies.
  2. Heat the ghee, add the cumin seeds and fry until they crackle.
  3. Add the mashed green peas, chilies, lemon juice and salt and cool for few minutes.
  4. Sprinkle the flour and cook for 2 to 3 minutes until the mixture becomes dry.
Method:
  1. Roll out each ball of dough into a small round. Put a tsp. of the stuffing in the center and close it.
  2. Roll out thinly with the help of a little flour.
  3. Deep fry in ghee. Serve hot.
