Methi Mutter Malai

Serves 6

Ingredients:
3 tsp. chopped fenugreek leaves  ½ tsp. cumin seeds 
1 chopped onion  2 large tomatoes 
1 teacup boiled green peas 1 teacup milk 
3 tbsp. oil Salt to taste
A pinch of sugar
For the Paste: For The Dry Masala: [to be roasted lightly and powdered] 
1 onion  2 small sticks cinnamon 
4 green chillies 4 cloves
1" ginger piece  2 cardamoms 
3 cloves garlic  4 peppercorns 
2 tbsp. cashew nuts  1 tsp. cumin seeds
2 tsp. khus-khus 
Method: 
  1. Wash the fenugreek leaves and add ½ tsp. of salt, wait for 15 minutes and then squeeze out the water. Put the tomato in hot water for 10 minutes, remove and blend into a puree. 
  2. Heat 2 tbsp. oil, add cumin seeds and fry until they crackle, add the fenugreek and cook for 3-4 minutes. remove the fenugreek. Add the balance 1 tbsp. of oil and heat again, add the onion and fry until golden. 
  3. Add the paste and fry for 1 minute. Add the tomato puree and the dry masala and fry again. Add the peas, fenugreek, milk, sugar, salt and add a little water and cook for a few minutes. Serve hot.
