Potato Cups With Cheesy Herbs

Preparation time: 1 hr. 15 minutes

Serves 4

Ingredients:
8 medium-sized potatoes 100 gm. home made cheese
2 tsp. mint, basil, soya and coriander leaves, finely chopped  1 tsp. freshly ground black pepper 
2 tsp. salt  1 chopped green chilli
4 tbsp. butter ¼ tsp. dalchini-nutmeg powder mix
Pudina leaves, tomato dice, spring onion for garnishing 
Method:
  1. Scrub the skin of potatoes to remove the dirt and prick with a fork. Place potato in hot oven [180 C] for 1 hr until tender. When the potatoes are cool enough to handle, cut into half and scoop out the pulp, leaving a ½" thick shell.
  2. Now potato cups are ready. Smear butter inside and outside liberally. Mix all filing ingredients and spices and mix well. Stuff this into potato cups and place in oven for 10-15 minutes. Remove and serve.
