Pumpkin Erissery

Preparation time: 25-30 minutes

Serves 4

Ingredients:
250 gm. pumpkin ½ tsp. turmeric powder
1 coconut grated 1 tsp. mustard seeds
1 ½ tsp. cumin seeds Some curry leaves
3 flakes of garlic [crushed]  1 small onion sliced 
2 dry red chillies 1/3 tsp. salt
Method:
  1. Roast the cumin seeds and grind them to a powder. Wash, peel and slice the pumpkin. Boil it in a little water with salt and turmeric powder till the pumpkin is tender and almost dry. Now mash the pumpkin coarsely. Heat 3 tbsp. oil in a pan. Put mustard seeds in it.
  2. When the seeds stop popping add chopped onion, garlic, powdered cumin seeds, grated coconut, salt, red dry chillies broken into bits and curry leaves. Mix and cook well until golden brown. Add mashed pumpkin to this masala gravy. 
  3. Mix well. Put ½ cup water and give it a boil. Remove from fire. Sprinkle some grated coconut. Serve hot.
