Stir-Fried Vegetable Parathas

Preparation time: 45 minutes  

Cooking time: 20 minutes

Makes: 12 parathas 

Ingredients:
For the Stuffing:
 2 sliced onion  2 teacups shredded cabbage 
A pinch of ajinomoto powder [optional] 1 teacup coarsely grated carrot
 ½ tsp. Soya sauce 1 teacup bean sprouts
½ tsp. sugar 2 tbsp. oil
Salt to taste
For the Dough: 
3 teacups maida 
1 tbsp. oil
 ½ tsp. oil
Method: 
For the Dough Mixture:

Mix the plain flour, oil and salt. Add a little warm water to make a soft dough. Knead the dough very well for a few minutes, leave aside for ½ hour.

For the Stuffing:

Heat the oil, add the vegetables, ajinomoto powder and onions and cook for 3-4 minutes. Add the Soya sauce and salt, mix well and cool. 

Method:
  1. Divide the dough into 12 parts and roll out very thinly. Put 2-3 tbsp. of the stuffing in the center of each parathas and lightly fold on all the sides. Put the paratha on a tava with the open edges at the bottom. Cook for a few minutes, turn over on the other side and cook again until crisp. 
  2. Repeat for the remaining parathas. Serve hot with chili garlic sauce.
