Stuffed Lauki 

Preparation time: 30 minutes 

Serves 3-4

Ingredients:
1 lauki  1 cup shelled peas
2 boiled potatoes  2 grated carrots
1 cup grated cauliflower  1 chopped green chilli
5-6 mushrooms  1 tbsp. oil
1 tsp. salt ½ tsp. red chilli powder
½ tsp. garam masala  1 tsp. cumin seeds
1 tsp. whole coriander seeds  1 tsp. amchur 
Method: 
  1. Peel and cut the lauki on one side leaving stem side intact. Scoop out the inner portion. Boil lauki in salted water till tender, let it cool. Boil the peas, cut the potatoes into small pieces, cut the mushrooms and boil them. 
  2. Heat oil in a wok, put cumin seeds, whole coriander and all the masalas. Put the vegetables and mix well. Fill lauki with this mixture. Smear oil on the lauki. Keep it in a preheated oven for 10-15 minutes [or cook in a karahi] for 5-10 minutes until it becomes slightly brown. Your stuffed lauki is ready to serve.
