Stuffed Mushrooms 
Preparation time: 30 minutes  Serves 2-4 
Ingredients:
400 gm. mushroom  ½ cup grated paneer
100 gm. boiled and mashed potatoes ½ cup chopped coriander leaves
1 tsp. chopped ginger  ½ tsp. cumin seeds 
1 cup oil for frying  1 tsp. red chilli powder
2 tsp. brown onion paste 1 tsp. garam masala powder 
1 tbsp. ginger-garlic paste 1 tsp. coriander powder 
2 tsp. tomato paste 2 tsp. corn flour
Method:
  1. Remove the stems from the mushrooms and wash. Heat 1 tsp. oil in a pan, add cumin seeds, when they crackle, add mashed potatoes and paneer and mix well. Add salt, red chilli powder and 1 tbsp. coriander powder, stir well.
  2. Take one mushroom and stuff it with this stuffing, cover it with another mushroom. Make a smooth paste of corn flour, dip each stuffed mushroom in this paste and deep-fry till it becomes golden brown. 
  3. Heat oil in a pan, add brown onion paste and ginger paste and fry well. Add tomato puree and garam masala powder, saute for a minute. Add salt, chopped ginger and red chilli powder. Fry till the masalas leave the sides of the pan. 
  4. Make thick gravy. Add mushrooms very carefully. Garnish with chopped coriander leaves. Serve hot.
