Stuffed Shahi Puris
Preparation time: 15 minutes Makes: 12 Puris
Cooking time: 20 minutes  
Ingredients:
For the Dough: To be Mixed into the Stuffing:
2 teacups fenugreek [methi] leaves, finely chopped 100 gms. grated paneer
2 teacups wheat flour or plain flour [maida] 3 to 4 chopped green chilies

¼ tsp. baking powder

2 tbsp. chopped coriander

1 tbsp. fresh curd Salt to taste
2 tbsp. melted ghee
Other Ingredients:
Ghee for deep frying.
For the Dough Mixture [Method]:
  1. Sprinkle salt over the chopped fenugreek leaves and leave aside. After 15 minutes, squeeze out the water.
  2. Mix the fenugreek and the flour, baking powder, curd and melted ghee and make a dough by adding a little water.
  3. Divide the dough into 12 balls and roll out each ball into a small round.
Method:
  1. Put 1 tsp. of the stuffing in one round, fold the edges towards the center and close. Roll out again.

  2. Repeat for the remaining rounds and stuffing.

  3. Deep fry in ghee. Serve hot.
