Vegetable Roll 

Preparation time: 1 hr. 

Serve 2-3

Ingredients:
250 gm. boiled potatoes  ½ cup bread crumbs 
½ cup paneer  ½ cup grated carrots
½ cup grated cabbage ½ cup grated cauliflower
A pinch of turmeric  250 gm. tomatoes 
½ tsp. red chilli powder ½ tsp. garam masala
½ tsp. sugar 
For Making Tomato Sauce:
  1. Boil and blend the tomatoes, add ½ tsp. each of salt, garam masala and red chilli powder and ½ tsp. sugar and cook. Cool and add green coriander leaves. 
Method:
  1. Mash potatoes, add bread crumbs, butter, salt and pepper. Divide the mixture into three. Put one layer at the bottom. Spread cauliflower and salt over it, then spread potato and carrot, and above it potato and cabbage. 
  2. Grate paneer, add a pinch of salt and turmeric. Put paneer layer at the top, roll it. Pack in an aluminum foil and steam bake [Boil water in a pressure cooker, keep a small container and keep the roll in it] for 1 hr. [without pressure.] 
  3. Let it cool slightly, remove from the foil. Pour fresh sauce over it, cut and serve.
