Vegetable Soup
Ingredients:
1 cup cubed onion  ½ tbs. butter 
2 tbs. flour ½ cup cauliflower florets
½ cup carrot ¼ cup beetroot
1 cup cabbage  ½ cup green peas
1 cup milk  Salt, pepper, grated cheese [optional] 
Method:
  1. Fry onion in ghee till brown at the edges, add flour fry till brown. Add rest of vegetables, cook in water till tender, but not over-done. Drain vegetables and grind them. Repeat for rest of the vegetables.
  2. Mix the ground vegetables with stock, add milk and water to obtain desired consistency. Bring to a boil. Add salt and pepper to taste. Serve sprinkled with grated cheese if desired.
